
This session will explore the powerful connection between diet and health. Dr. Carol Johnston will discuss how the foods we consume can play a critical role in preventing, managing, and even reversing chronic diseases. She will discuss pro/prebiotics; vinegar, protein, and nitrates for gut health, diabetes, sarcopenia, and cardiovascular health. You will learn the science behind nutrition as well as practical tips for incorporating these foods into your daily diet.
Our presenter for this seminar, Dr. Carol Johnston, is a Professor and Senior Associate Dean of Faculty Success in the College of Health Solutions at Arizona State University. She has published over 150 research articles and book chapters focused on the impacts of functional foods, botanicals, and nutrients on human health outcomes. She is a registered dietitian and an expert in vitamin C metabolism, the medicinal use of vinegar, high protein/low carbohydrate diets for weight loss, and vegetarian diets. She is often quoted in popular magazines and news outlets and is listed among the top 1% of cited scientists world-wide. She has held elected positions on Expert Committees of the U.S. Pharmacopoeia in Washington DC. She has been recognized on multiple occasions for her teaching excellence at ASU, and she has received several national awards from the American College of Nutrition for her professional and academic accomplishments.
